This cute and easy Gruffalo Crumble Muffins recipe is the perfect way to celebrate World Book Day or for fun Gruffalo party food for kids!
With World Book Day coming up next week, now seems like a good time to share this fun Gruffalo themed recipe - yummy Gruffalo crumble muffins!
The Gruffalo is a massive favourite in this house and has been since my 10 year old was a toddler - indeed all of Julia Donaldson's children's books have been a hit with both of my boys.
It's a great source of inspiration for fun food too, from roasted fox to owl ice cream, I've made lots of Gruffalo themed food over the years, including fun Gruffalo themed bento lunches, Gruffalo Pizza and this fun Gruffalo inspired muffin tin meal I created for Organix.
These fun and easy Gruffalo crumble muffins would be perfect to bake with your kids to celebrate World Book Day, or they'd make great fun Gruffalo party food for kids! They're easy to make and totally yummy - I 'helped' to test them myself!
Gruffalo Crumble Muffins
Ingredients (makes 12):
For the crumble topping:
- 25g coconut oil or butter
- 80g wholemeal or plain flour
- 20g rolled oats
- 1 Tbsp maple syrup
For the muffins:
- 3 eggs
- 3 Tbs maple syrup
- 1 tsp vanilla extract
- 120ml vegetable or coconut oil
- 1 small apple
- 120g wholemeal or plain flour
- 50g rolled oats
- 2 tsp baking powderGruffa
- 50g raisins (optional)
For the Gruffalo eyes (optional):
- Dried mango or dried apricot
- raisins
Method:
Preheat oven to 180°C (Gas mark 4/350°F). Line a 12 hole muffin tin with cupcake cases.
Make the crumble topping. If using coconut oil, gently melt first, then place all the crumble ingredients in a bowl and rub together with your fingertips until you have sticky crumbs. Place to one side for later.
Whisk the eggs with the maple syrup, vanilla extract and vegetable oil (or gently melted coconut oil).
Grate the apple and stir into the egg mixture, then add the flour, oats and baking powder to the bowl and gently fold in.
Tip in the raisins if using and gently stir them in until evenly distributed throughout the mixture.
Spoon the mixture into lined muffin tin, then sprinkle over the crumble topping, dividing it equally between all of the muffins.
Bake for 15-20 minutes until golden and cooked through. To check if they are cooked, stick a metal skewer or sharp knife into the centre of a muffin – it should come out clean.
Leave to cool on a wire rack. Once cool, top each muffin with 2 circles cut from dried mango or apricot and add raisins to make Gruffalo eyes.
