These easy and delicious monster peanut butter energy bites made with SKIPPY® Peanut Butter make a great snack and a fun no-bake recipe to make with the kids this summer!

This week marks the start of the school summer holidays, and like many parents, I'm full of plans to keep the kids occupied over the weeks ahead! One of my favourite activities to do with the kids is baking and cooking.
I always feel great about getting the kids involved in the kitchen because I know that even the briefest of time spent helping out in the kitchen can help further those essential life skills. I encourage my boys to help me with everyday meal preparation - breakfasts, lunches and dinners, but I know that they love it best when they are cooking purely for fun, and this easy energy bites recipe is perfect for a fun cooking session with kids!
I was recently challenged to create a fun summer SKIPPY® recipe with smooth, creamy, delicious SKIPPY® Peanut Butter. Perfect for spreading and baking, with more than 91% high quality peanuts in every jar, American-style SKIPPY® Peanut Butter is a great ingredient for homemade kids treats, and I can tell you, the test batches of these Peanut Butter energy bites didn't survive long, they were just so delicious!
I used the smooth variety of SKIPPY® Peanut Butter for this recipe, which is made with sweeter peanuts sourced from the Americas that have a finer grind which just melts in the mouth. It was perfect for these energy bites as it combined really smoothly with the honey before we mixed in the remaining ingredients.
If you prefer a bit of extra crunch in your energy bites, then try using the Extra Crunchy variety instead, which contains large peanut pieces in a deliciously creamy mix.
I also added chia seeds for an extra energy boost, but any seeds of your choice would work - smaller seeds like sesame seeds or poppy seeds work particularly well in this recipe.

Monster Peanut Butter Energy Bites
Ingredients (makes 18 energy bites):
- 200g SKIPPY® Peanut Butter Smooth
- 120g honey
- 140g oats
- 30g chia seeds (or other seeds of your choice)
- 50g chocolate chips
- 1 pack edible candy eyeballs (optional)
Method:
Measure the SKIPPY® Peanut Butter Smooth and honey into a bowl and stir together until smooth.
Add the oats and chia seeds, and mix together until completely combined.
Add the chocolate chips and mix well to distribute them through the mixture.
Line a small baking tray or plate with greaseproof or baking paper.
Take spoonfuls of the mixture and roll them into walnut-sized balls. Place on the lined tray and repeat until you have used up all the mixture.
Gently press edible candy eyeballs into the top of your energy balls to turn them into monsters if wanted.
Chill in the fridge for at least 30 minutes, then serve and enjoy!
Notes: These bites can be stored in the fridge for up to a week, however if storing them for more than a day, leave the candy eyes off and add them to the energy bites just before serving instead.
