Following on from the fun Monster Apple 'Donuts' Recipe I shared here on the blog last Halloween, today I have the normal 'everyday' version of my peanut butter apple 'donuts' to share with you!
This simple but delicious raw apple recipe takes less than 5 minutes to put together and makes a really fun healthy snack for kids. The apple and dried fruit helps towards their five a day and the nuts are high in protein to help keep them full until the next meal.
We topped our apple donuts with coconut, flaked almonds and raisins, but you can use any dried fruit and nuts of your choice.
Raw Peanut Butter Apple 'Donuts'
Ingredients (makes 6):
- 2 apples
- 3 Tbsp smooth peanut butter
- 2 Tbsp desiccated coconut
- handful flaked almonds
- handful raisins
Method:
Slice the top and bottom from each apple, then cut the remaining apple into disks, around 1cm thick.
Using an apple corer, round mini bento cutter or a sharp knife, cut the centre from each apple slice.
Spread each apple ring with a layer of peanut butter.
Sprinkle over the desiccated coconut, flaked almonds and raisins to top each one.
Transfer to a plate and serve immediately.

Note: This recipe should be served as soon as possible after making. If you want to make them for party food where they may sit for a little while before eating, the apple slices should be dipped in cold water with a little lemon juice immediately after cutting to help prevent browning. Dry them off on a piece of kitchen paper before spreading with the peanut butter and toppings.

Ooooh yum! We make these too, with a little muesli or granola on top! Soooooo good! Give your kids an apple..... they can take it or leave it, but give them a Donut apple and you know they will devour it!
