It’s day eleven of the Eats Amazing Advent Calendar and after sharing several treats this week, I have a healthier recipe to share with you today - Cranberry Pistachio Frozen Yogurt Bark.
This delicious yogurt bark is a great healthy snack to have stashed away in the freezer over the Christmas holidays, ready to stave off the inevitable cries of 'I'm hungry!' every five minutes (or is that just my children?!). The red of the cranberries and green of the pistachios makes it feel beautifully festive whilst being something a little bit different from all the rich traditional festive food. It's really easy to make too - a great easy recipe that children of all ages can make themselves.

Cranberry Pistachio Frozen Yogurt Bark
Ingredients:
- 300g Greek yogurt
- 1 tbs maple syrup (optional)
- 25g desiccated coconut
- 50g cranberries
- 50g pistachios
Method
Give the yogurt a good stir, then place it in a bowl. Drizzle in the maple syrup to sweeten (optional). Add the desiccated coconut and stir well to mix in.
Find a baking tray that fits into your freezer. Line the baking tray with baking paper or tinfoil. Pour the yogurt onto the lined tray and spread out into an even layer. Top with the cranberries and pistachios, pressing gently into the yogurt.
Pop into the freezer and freeze for two hours or overnight, until solid and frozen through. Break into pieces to serve. For the best texture, leave for a minute or two to soften slightly before serving.
Store any pieces of leftover bark in an airtight tub or bag in the freezer until needed.
