This quick & easy garlic stir fry courgetti recipe makes a great healthy side dish for family meals. Kids will love helping you to spiralize the courgette noodles!
Today I'm dusting off my spiralizer and sharing a super simple side dish recipe - garlic stir fry courgetti. This easy summer recipe takes just minutes to prepare and is a great way of using up a glut of courgettes if you have them growing in the garden. I like to serve them under bolognese sauce or just as a simple side dish with any family meal.
I created a new Side Dish Recipes section for my recipe index when I was overhauling the Eats Amazing website earlier this year, and noticed recently that it's looking a little bare of recipes. With this in mind I'm planning on sharing some of the simple side-dishes that I cook regularly for our family meals over the next few months, hence this recipe today!
A note on spiralizing courgettes for courgetti - don't peel the courgettes before spiralizing. It's best to spiralize them unpeeled as they will have more flavour that way and most of the nutrients are in the skin too.
This year we've got a yellow courgette plant in the garden (which my boys are very excited about!) so I used the first yellow courgette we harvested to make this yummy courgetti.
My boys can usually be persuaded to try some courgetti by renaming it 'worms' or 'snakes' - that doesn't sound quite as appetising to me but they love it! They really enjoy getting involved in spiralizing the vegetables too - under close supervision of course.
Garlic Stir Fry Courgetti
Ingredients:
- 2 courgettes
- 2 cloves garlic
- 1 Tbsp olive oil
- sea salt and pepper to taste
Method:
Wash the courgettes, then chop off the ends and spiralize (unpeeled) on the thinnest noodle blade.
Peel the garlic cloves and cut into thin slivers.
Heat the oil in a large frying pan or wok. Add the garlic and sizzle in the oil until just starting to turn golden around the edges.
Add the spiralized courgettes to the pan, then stir fry for 3-5 minutes until they are cooked but still have a little bite.
Season with a sprinkle of sea salt and pepper to taste.
Serve as a side dish with any meal, or under Bolognese or pasta sauce.

This looks fab. I love spiralized veg but have only had it raw so far although I keep meaning to try them cooked. This looks simple enough for me to give a go!

What a great simple recipe! We used as main for lunch as we have surplus courgettes from our allotment. Added some cherry toms whilst cooking and grated cheese on top. Served with a couple of slices of baguette. Delicious.
