Today I'm sharing a simple recipe that's been a staple in our house for some time now - crinkle cut butternut squash fries. I first discovered these earlier in the year when our local supermarket started selling fresh ready-cut butternut squash fries. They were quick and easy to cook and a big hit with the kids, but it occurred to me that it would be much cheaper and just as easy to make them myself. I was absolutely right - for less money I could get a lot more fries from one whole butternut squash than from in a pack of ready-cut ones and they're fresher too - win win!

A portion of these squash fries counts as one of your 5 a day and if you're following the Slimming World Plan they're a speed food too! They make a great alternative to potato fries and are utterly delicious!
Crinkle Cut Butternut Squash Fries
Ingredients:
- 1 butternut squash
- 1 Tbs olive oil or spray oil
- vinegar and sea salt to serve (optional)
Method:
Preheat your oven to 200°C (Gas mark 6/390°F). Lightly brush or spray a baking tray with a little olive oil.
Peel and de-seed your butternut squash.
With a crinkle cutter, cut into chunky fries, roughly 1 ½ cm thick.
Spread over the baking tray and drizzle with the remaining oil or spray with oil spray.
Bake in the preheated oven for 15 minutes.
Remove from the oven and turn all of the fries, then return to the oven and bake for a further 15 minutes until cooked through.
Sprinkle with vinegar and seas salt (optional) and serve immediately.
Enjoy!
Notes: These fries are softer than traditional potato fries rather than crispy.
If you're following the Slimming World diet, use a spray oil like fry light rather than olive oil.
