These fun reindeer pizza quesadillas make a perfect quick and easy family meal or Christmas party food idea and they're great for using up festive leftovers too!
Today I have another Reindeer themed festive recipe to share - cute and easy reindeer pizza quesadillas!
I must have had reindeer on the brain after making my fun Rudolf reindeer tortilla roll-ups last week, because this idea came to me as I was planning to use up the leftover tortilla wraps by making simple pesto pizza quesadillas for tea.
The festive twist to turn them into reindeer popped into my head and I just had to make them immediately! Thankfully they turned out just as I imagined and I even convinced both my boys to eat the olives too, so I call that a win!
These would be great to serve up at a party over the festive season, quesadillas are really quick and easy to whip up and adding the reindeer decorations just a minute or two extra.
They're fun for a festive family tea too, why not supply the kids with the reindeer 'pieces' and get them to decorate their own?
Quesadillas are a really great meal for using up leftovers - I used red and green peppers in mine but you can throw in any odds and ends of vegetables or meat from the fridge. You can also use any cheese you like, so save those cheeseboard scraps to make a quick and easy family meal with this recipe!
Easy Reindeer Pizza Quesadillas
Ingredients (makes 6):
- 2 wholemeal tortilla wraps
- 1 Tbs red pesto
- handful grated cheese*
- ¼ red pepper
- ¼ green pepper
To decorate (optional):
- 3 cherry tomatoes
- 6 black olives
- 12 plain pretzels
Method:
Prepare your fillings – grate the cheese, de-seed and chop the peppers.
Lay a tortilla wrap in a frying pan. Spread the pesto all over the tortilla, leaving a small gap around the edge.
Sprinkle the grated cheese over the top of the pesto.
Scatter over the chopped peppers or other fillings** of your choice.
Place the second tortilla on top to form a sandwich with the fillings in the middle.
Dry-fry the tortilla for a couple of minutes until the base is golden. Once the base is cooked, pop a plate on top of the pan and flip the pan over, then carefully slide the quesadilla back into the pan to cook on the other side. Cook for a few minutes more until the cheese is melted and the quesadilla cooked through.
Slide the quesadilla out of the pan and onto a chopping board and cut it into 6 wedges. Place on the plate or platter that you'll be serving it up on.
Slice the cherry tomatoes in half, and add one half to the tip of each quesadilla wedge for the reindeer noses.
Cut the olives into rings, then add two rings to each quesadilla wedge for the reindeer eyes.
Place 2 pretzels on each quesadilla wedge for the reindeer antlers.
Serve immediately.

Notes: *I used a ready grated 4 cheese mix but cheddar, mozzarella or a hard goats cheese also work well.
**Other suggested alternative fillings you could use include;
Chopped veggies – red onion, spring onion, spinach, mushrooms, cherry tomatoes, sweetcorn, peas, cooked broccoli, finely chopped cooked potato, sweet potato or squash.
Cooked meat – ham, chorizo, pepperoni, shredded chicken, turkey, bacon or sausage.
The quesadillas can also be served cold - cool the wedges on a cooling rack after cooking and decorate just before serving.
