Turn simple veggie crudites into something really special with this fun and healthy recipe for vegetable cars - perfect for car themed party food as well as fun lunch boxes and snacks for kids!
My boys have always loved these fun mini pepper cars, they're so much fun in a special lunch box or for a fun after school snack, and of course they're perfect for car themed party food too, though be sure to warn guests about the cocktail sticks holding them together before serving!
I first created these cars as part of a Cars themed picnic a few years ago but I thought that it's such a fun idea that it was about time that they had a blog post all to themselves!
You can usually find the baby peppers and baby cucumbers in the main supermarkets, but I find that Lidl seem to have them most often in stock if you're heading off to hunt for them. If you can't find baby cucumbers, carrot rounds work well for the wheels too.
Vegetable Cars
Ingredients (makes 5):
- 3 baby cucumbers
- 5 baby peppers
Method:
Wash the cucumbers and peppers.
Top and tail the mini cucumbers and discard the ends. Cut into round slices – you'll need 20 slices total. These will form wheels.
Push two cocktail sticks through each of the peppers for the car axles.
Add four cucumber slice wheels to each pepper car, pushing them onto the ends of the cocktail sticks.
Serve immediately and enjoy!
