They might look complicated to make, but these snickerdoodles are actually a really simple vanilla cookie, rolled in cinnamon sugar before baking for an absolutely delicious treat that you just have to try!
There appears to be some debate on the origins of the snickerdoodle, as they are popular in the US and Canada, but may well have their roots in Germany. Whoever it was that created the first snickerdoodle cookie, in my opinion they deserve a whole pile of medals for their wonderful contribution to mankind!

- 185g self-raising flour
For the cinnamon coating:

Add the self-raising flour, whisk until just combined, then pull together with your hands to form a dough.
Split the cookie dough mixture into 24 roughly equal pieces, (each around one flat tablespoon in size), then roll each piece into a ball.
Mix together the caster sugar and cinnamon in a small bowl.
Roll the cookie balls around in the cinnamon sugar and place on the baking tray, leaving plenty of space in between each on for spreading.
Bake the cookies for 10-12 minutes, then remove from the oven and leave the cookies on the tray to cool.
Enjoy!
Note: Once completely cool, cookies can be stored in an airtight container for up to 3 days.
