These frozen rainbow fruit kebabs are a great healthy summer snack that kids can make themselves and a great healthy alternative to shop bought ice lollies!
This week I've had rainbows on the brain so as well as the pretty rainbow bagel topping recipe I shared a few days ago, I've also got two more rainbow recipes to share with you, both of which are frozen treats, perfect for helping the kids cool down during the hot summer weather we're enjoying at the moment.
The first recipe, which I'm sharing with you today, is for frozen rainbow fruit kebabs.
These frosty fruit skewers are really easy to put together so they make a perfect little summer holiday project that even the smallest children can get involved in making. Best of all for a kids activity, they get to eat their efforts as a healthy snack at the end!
The simple frozen kebabs make a great healthy alternative to shop bought ice lollies and even contribute towards your 5 a day.
Frozen Rainbow Fruit Kebabs
Ingredients:
- 6-8 strawberries
- handful red grapes
- handful green grapes
- handful blueberries
- 1 large ripe banana
- 50g natural yogurt
- honey to taste (optional)
Method:
Start by lining a baking tray with baking paper or tinfoil. This will make the fruit kebabs easier to remove once frozen. Make sure it fits into your freezer!
Prepare the fruit; wash and hull the strawberries, wash the grapes and blueberries, peel the banana and cut into bite-sized pieces.
Using kitchen scissors, cut the sharp ends off of 6-8 bamboo skewers.
Thread the fruit onto the skewers. We did all of ours in the same order for a pretty rainbow effect; 1 strawberry, red grapes, blueberries, green grapes and a banana slice, but you can put them on in any order or mix them up if preferred.
Place all of the kebabs onto the lined tray as you make them up.
Measure out the yogurt and mix in a little honey to sweeten if wanted (the honey is optional). Spoon the yogurt mixture into a small plastic freezer bag, then snip off a tiny corner and pipe drizzles of yogurt all over the fruit kebabs. This messy task was a particularly fun bit for the kids!
Pop the kebabs in the freezer and freeze for about ½ hour until the yogurt has frozen solid and the fruit is icy.
Carefully remove from the baking tray, serve and enjoy!
Any leftover kebabs can be popped into a large freezer bag and enjoyed at a later date. If serving from solid frozen, take the kebabs out of the freezer and leave to soften a little for a few minutes to make them easier to eat.
