Do you struggle to come up with quick and easy healthy mid-week meal ideas? I find myself stuck in a rut a lot, repeating the same old meals, so recently I've been working on creating some new family friendly dinner recipes that are quick to throw together but still healthy. I'm sharing one of them today - a yummy sweet chilli prawn stir fry made just from frozen foods and a few store cupboard ingredients.
I've been working with Iceland recently to demonstrate the #PowerOfFrozen, highlighting how great the quality of frozen food is these days. I was challenged to create a delicious recipe that helps to 'cut the hassle' of putting a healthy meal on the table by using frozen foods to save time and effort without compromising on taste or quality. This recipe does just that - it needs no chopping or preparation and you can have it on the table far quicker than if you ordered a takeaway! I'll be keeping these ingredients on hand in the freezer from now on for those nights when I don't much feel like cooking, it really was no effort at all to pull this easy meal together!
I wasn't sure how this recipe would go down with my boys but they absolutely loved it and both wolfed down the lot. I was also pleasantly surprised by how nice the egg fried rice was, I've never had frozen rice before but you'd never guess it was cooked from frozen.
Here are the frozen ingredients I used to create this recipe:
- Iceland Frozen Baby Corn & Sugar Snap Peas 400g - £1.50
- Iceland Quick Cook Frozen Sliced Mixed Peppers 650g - £1.00
- Iceland Egg Fried Rice 650g - £1.50
- Iceland Fish Market North Atlantic Prawns 300g - £3.50
I also used some ingredients that I already had in the cupboard - a bit of oil, sweet chilli dipping sauce and soy sauce. As you can see the total spend for the main ingredients was just £7.50 for a healthy family meal for four (two adults & two children) - rather cheaper than a takeaway! I also let my 8 year old choose a dessert from the amazing array on offer in Iceland, he chose rhubarb & custard ice cream cones, just £1 for a pack of 4!
Sweet Chilli Prawn Stir Fry with Egg Fried Rice
Ingredients:
- 1 tbs Vegetable Oil
- 400g Iceland Frozen Baby Corn & Sugar Snap Peas
- 300g Iceland Quick Cook Frozen Sliced Mixed Peppers
- 300g Iceland Fish Market North Atlantic Prawns
- 650g Iceland Egg Fried Rice
- 2 tbs sweet chilli dipping sauce
- 1 tbs soy sauce
Method:
Start by defrosting the prawns. Ideally you should pop them in the fridge the night before to defrost overnight, but if you're forgetful like me or need to throw together a last minute meal, you can also defrost frozen cooked prawns quickly by popping them into a bowl of cool tap water - they should defrost in 10-15 minutes.
Warm half of the vegetable oil in a large wok or pan. Add the baby corn and sugar snap peas mix to the pan and stir fry for 5 minutes. In a second pan, heat the other half of the oil ready for the egg fried rice.
Add the mixed peppers to the pan along with the prawns. At the same time add the egg fried rice to the second pan to heat through. Stir fry both for 2 minutes, then add the sweet chilli sauce and soy sauce to the pan with the vegetables and stir fry both for another 2-3 minutes until the vegetables are cooked and the egg fried rice is hot.
Serve immediately, with extra sweet chilli sauce on the side for drizzling.
