These gorgeous mini fairy bread sandwiches are made with homemade rainbow coconut sprinkles for a healthier take on traditional fairy bread.
Last week I shared my easy rainbow coconut sprinkles recipe and for today's Sandwich Week post, I have some gorgeous mini fairy bread sandwiches for you, made with the homemade sprinkles for a slightly healthier treat!
These cute little fairy bread sandwiches are perfect for popping in bento boxes, packed lunches and party food too - what child wouldn't love this bright rainbow treat!
Every day this week I'm sharing new fun and creative sandwich ideas ready for back to school lunches, and as we're now on day 5 of Sandwich Week, I've built up quite a collection already! From sushi sandwich roll-ups to sandwich kebabs and shaped cookie cutter sandwiches to a fun owl sandwich, I hope you're enjoying these fun sandwich ideas!
Taking a few extra minutes to add a little fun to your child's lunch box can make the chore of packing lunches a little more enjoyable for you and of course it will bring a smile to your child's face when they open their lunch box at school. Whether you surprise them with a fun lunch or get them involved in making their own lunches - packed lunches don't ever have to be boring!
As I mentioned above, I used my homemade coconut sprinkles in these cute mini fairy bread sandwiches, but you could of course use shop-bought sprinkles to make them too if you're short on time.
Don't be put off by the idea of making homemade sprinkles though, the coconut sprinkles are SO easy to make with just 5 minutes of prep time needed! You can find my sprinkles recipe here if you'd like to try them: Homemade Rainbow Coconut Sprinkles Recipe.
Fairy Bread Sandwiches with Homemade Sprinkles
Ingredients:
- 2 slices white or brown bread
- 1 Tbsp cream cheese
- small handful homemade coconut sprinkles
Method:
Stack the two slices of bread together and remove the crusts with a sharp knife (you can also leave the crusts on the sandwiches if wanted). Cut the bread into quarters.
Carefully separate the pieces of bread, keeping each set of quarters together.
Spread cream cheese over half of the bread slices and top with a generous pinch of rainbow coconut sprinkles.
Cut shapes into the other bread slices using mini bento cutters, then place on top of the cream cheese/sprinkle covered slices to form mini sandwiches.
Pack in a lunch box or serve immediately.
