These easy peanut butter rice crispy bars have just 3 ingredients and take just minutes to prepare!
They're fun to make with the kids and perfect for an easy after school snack or to take along to a family picnic.
Naturally dairy free and with absolutely no marshmallows in sight, these easy no bake bars make a great healthier alternative to shop bought cereal bars.
Use sugar free puffed rice and sugar free peanut butter to bring down the sugar levels or swap the puffed rice cereal for gluten free rice crispies to keep them gluten free too.

No-Bake Peanut Butter Rice Crispy Bars
Ingredients:
- 275g peanut butter (I used smooth)
- 175g honey
- 125g puffed rice cereal
Method:
Grease and line a brownie pan with non-stick baking paper.
Measure the peanut butter and honey into a large microwave safe bowl and mix together.
Place the bowl in the microwave and cook for 30 seconds at a time, stirring in between, until the mixure is boiling and starting to thicken. This will usually take 2-3 minutes.
Working quickly, pour the puffed rice cereal into the peanut butter and honey mixture and stir until well combined.
Tip the mixture into the lined pan then press down into the tin to form an even layer.
Place in the fridge to set for around an hour, then remove and slice into bars.
Store in an airtight container in a cool, dry place.
