What’s better than yummy homemade oatcakes? Yummy homemade oatcakes shaped like Mickey Mouse of course!
Disney UK asked me to create a fun and healthy recipe to help support their Healthy Living commitment - using the power of Disney characters and storytelling to make it easier for families to eat more nutritious food and take part in physical activities.
With Mickey celebrating his 90th anniversary on the 18th November, his iconic silhouette was the perfect shape and inspiration for these tasty cheese oatcakes!
This simple recipe is fun to make with kids, really tasty and is nutritious too. The oats are a great source of carbohydrates, fibre and protein as well as multiple vitamins and minerals, and of course cheese is a great source of calcium and protein for growing kids.
Serve up these oatcakes with savoury toppings or some yummy fruit - I created some cute Mickey Mouse fruit kebabs to go with ours.
To make the fruit kebabs, use a cookie cutter to cut Mickey shapes from a slice of watermelon, then thread onto bamboo skewers along with blueberries and black grapes.
You can of course cut your oatcakes into any shape you like - the great thing about these oatcakes is that they hold their shape perfectly when baking. Whether you go for traditional rounds or opt for the Mickey Mouse shape for extra fun, kids are sure to love these tasty savoury crackers!
They make great Mickey Mouse themed food to serve up at a Disney party, fun snacks at home or are great for packing as healthy alternative to sandwiches in lunch boxes.
Easy Mickey Mouse Cheese Oatcakes
Ingredients (makes 30):
- 240g oats
- 100g mature cheddar cheese
- 20g butter
- 150ml warm water
- 1-2 Tbsp plain flour (for rolling out)
Method:
Preheat your oven to 200°C (Gas mark 6/400°F). Line 2 baking trays with grease-proof or baking paper.
Weigh out the oats and pop into a blender or food processor. Whizz the oats to a rough flour consistency.
Finely grate the cheddar cheese then pop into a large bowl with the oats. Mix with a wooden spoon to combine.
Pop the butter into a microwave safe bowl and cook at 15 second intervals, stirring in between, until melted. Pour the butter into the bowl with the oats and cheese and mix to combine.
Add 100ml of warm water to the bowl and mix together to form a sticky dough. If the mixture is too crumbly, add more water as needed - I used 150ml in total.
Roll out the dough on a well floured surface, to around the thickness of a £1 coin.
Using cookie cutters, cut shapes of your choice from the dough, then transfer them to the lined baking trays.
Bake in the oven for 12-15 minutes until the edges of the oatcakes are starting to brown.
Leave on the baking tray for a couple of minutes after removing from the oven, then transfer to a wire rack to cool completely.
Enjoy!
Note: Once completely cool, store in an airtight container for up to a week.
