These quick and easy pizza quesadillas can be prepared and cooked in just 5 minutes! Perfect for lunch boxes, picnics or a light family friendly meal.
Today I'm sharing one of my favourite lunch box recipes - 5 minute pesto pizza quesadillas!
This recipe is SO quick and easy - you can have quesadillas cooked and cooling in just 5 minutes, so if you can squeeze a few minutes into the morning routine (or make them the night before) then these make a great alternative to sandwiches for lunch boxes.

I used up some veggies that I had at hand for mine but you can use any fillings that you'd usually use for pizza - pack in lots of lovely vegetables or go for a meat feast - whatever you or your kids prefer.
This recipe is great for using up odds and ends of leftovers too - scraps of meat from your Sunday roast or leftover cooked veggies can all be thrown in to make a delicious lunch or light meal!
Easy Pesto Pizza Quesadillas
Ingredients (makes 1):
- 1 tortilla wrap
- ½ Tbs red pesto
- handful grated cheese*
- ¼ red or yellow pepper
- 1 spring onion
Method:
Prepare your fillings – grate the cheese, de-seed and chop the pepper, wash and chop the spring onions.
Lay the tortilla wrap in a frying pan. Spread the pesto over half of the tortilla, then sprinkle the grated cheese over the top of the pesto. Scatter over the chopped pepper and spring onion or fillings of your choice.
Fold the tortilla in half to form a sandwich with the fillings in the middle.
Dry-fry the tortilla for a couple of minutes until the base is golden. Once the base is cooked, carefully flip the quesadilla over in the pan to cook on the other side. Cook for a few minutes more until the cheese is melted and the quesadilla cooked through.
Fold the tortilla in half again to create a triangle, then remove from the pan and serve warm or place on a cooling rack to cool completely, ready to be packed in a lunch box and eaten cold. Alternatively, rather than folding, you could also cut the tortilla into smaller wedges to serve.
*NOTES: I used a ready grated 3 cheese mix but cheddar, mozzarella or a hard goats cheese also work well.
Other suggested alternative fillings you could use include;
Chopped veggies - red onion, spinach, mushrooms, cherry tomatoes, sweetcorn, peas, cooked broccoli, finely chopped cooked potato, sweet potato or squash.
Cooked meat - ham, chorizo, pepperoni, shredded chicken, bacon or sausage.
