It’s day nineteen of the Eats Amazing Advent Calendar and I'm starting to feel quite proud of myself for creating so many new recipes in such a short space of time - I really hope you're enjoying them all too!
Today's recipe is a lovely and simple, healthy fruit salad. I've used red and green fruits to create this Christmas fruit salad, which would be perfect for a festive breakfast or a healthy dessert for the Christmas season. It's a really easy recipe that would be great for children to prepare too.
Green & Red Christmas Fruit Salad
Ingredients:
- 2 tbs orange juice
- 1 tbs honey
- 1 apple
- handful red & green grapes
- 80g pomegranate seeds
- handful raspberries
- 2 kiwi fruits
Method:
Start by whisking the orange juice with the honey in a large bowl to form a simple dressing.
Chop the apple into small bite-sized chunks, then toss immediately into the bowl with the orange juice and honey, and stir well to completely coat. Try to work quickly to help to prevent browning.
Slice the grapes in half lengthways and add to the bowl.
Sprinkle in the pomegranate seeds and raspberries.
Stir the mixture well to coat in the orange juice dressing.
Peel the kiwi fruits with a vegetable peeler, then slice into rounds and punch out Christmas tree shapes with a mini cutter*.
Add the kiwi fruit Christmas trees to the bowl to decorate, then serve immediately.
*NOTE: If you don't have a Christmas tree shaped cutter or are short on time, you could also slice into simple triangles with a sharp knife.
