This quick and easy Carrot Cake Porridge recipe takes just a few minutes to cook and is a great way to boost your 5 a day at breakfast time!

I was recently sent some ZENB Veggie Sticks and ZENB Veggie Bites to try and today's recipe was inspired by the ZENB Carrot Veggie Sticks, which I crumbled up and used to top my delicious carrot cake porridge.

ZENB Veggie Sticks are delicious vegan veggie bars made using as much of the whole vegetable as possible, along with puffed brown rice, red quinoa and almonds, which complement and enhance the simple flavour of the vegetables. We really enjoyed the ZENB Veggie Sticks, they have a lovely crunchy texture and plenty of flavour, and they're great for snacks on their own, as well as crumbled up and used for a topping for porridge, yogurt, smoothie bowls or pancakes.
ZENB Veggie Bites also champion the whole vegetable - like the veggie sticks, they also include the parts often discarded from seed to skin, and stem to peel, along with yummy blend of fruit, nuts and spices, to create a range of five unique flavours; Carrot, Pineapple and Coriander, Pumpkin, Apple and Cacao Nib, Beetroot, Orange and Cacao Nib, Red Pepper, Tomato and Chilli and Sweet Potato, Mango and Cinnamon.
What I found interesting about the veggie bites was that the different flavour combinations appealed differently to different members of the family, with my seven year old loving the carrot ones, my twelve year old loving the beetroot ones (which have a definite hint of chocolate orange!) and my favourite being the pumpkin ones. The veggie bites have a softer chewier texture than the veggie sticks, and come in resealable pouches, so they are perfect for nibbling on throughout the day.
Back to today's recipe - my carrot cake porridge makes a great vegan breakfast - use a dairy free milk (almond milk is my favourite for porridge) and maple syrup to keep it vegan. You can of course use any milk of your choice to make it though - my kids prefer whole cows milk for their porridge and that also works well for this recipe.
Carrot Cake Porridge
Ingredients (serves 2):
- 1 medium carrot
- 1 small apple
- 100g oats
- 1 tsp mixed spice
- ½ tsp cinnamon
- 350ml milk (or dairy free alternative)
To serve:
- 1 Tbsp maple syrup or honey (optional)
- 1 ZENB Carrot Veggie Stick
Method:
Wash the apple and scrub the carrot under cold running water.
Grate the carrot and apple, leaving the skin on both. Mix the grated carrot and apple in a large microwave safe bowl, along with the oats and spices.
Add the milk and stir well to combine.
Cook on high in the microwave for 3 minutes.
Remove from the microwave and stir again then place back in the microwave.
Continue to cook at 1 minute intervals, stirring in between, until the porridge is at your desired consistency.
Divide the porridge between two bowls, then drizzle with the maple syrup or honey if using.
Crumble up the ZENB Carrot Veggie Stick and sprinkle on top, then serve immediately.
