This easy chicken fajitas recipe with child-friendly fajita marinade can be cooked in an air fryer or a frying pan for a quick and easy family meal!
Today I'm sharing a new version of my all time favourite recipe - air fryer chicken fajitas! This easy fajitas recipe can be cooked in an air fryer for a quick and easy meal, but if you don't have an air fryer, I've also included instructions for cooking them on the stove-top too.

Please don't be put off by the length of the ingredients list, it's made up of easy to find ingredients and it is SO worth making your own marinade! This homemade fajita marinade, inspired by my mums recipe, is so delicious and a million miles away from a packet version!
My family friendly fajita marinade is full of flavour but not hot and spicy, so it's perfect for kids. If you prefer a bit of heat in your fajitas, I recommend adding jalapeno peppers or sliced fresh chillies to your wraps for a spicier grown-up version.
Easy Chicken Fajitas
Ingredients (serves 4):
- 3 garlic cloves
- small bunch fresh coriander
- zest and juice of 1 lime
- 2 Tbsp ground cumin
- 2 tsp smoked paprika
- 2 Tbsp olive oil
- 1 Tbsp white wine vinegar
- pinch salt
- 3 chicken breasts
- 1 large onion
- 1 green pepper
- 1 red pepper
To serve:
- 8 tortilla wraps
- sour cream
- grated cheese (optional)
Method:
Peel the garlic cloves and place in a small food processor or blender with the coriander (leaves and stalks). Whizz together until finely chopped.
Add the lime zest, lime juice, cumin, paprika, olive oil, the white wine vinegar and salt. Whizz together again until you have a thick marinade.
Slice the chicken into thin strips. Place in a bowl and pour over the marinade. Mix with a spoon until the chicken strips are completely coated in the marinade, then cover and place in the fridge for 30 minutes to soak up the flavours (note, you can skip the marinating if you're short on time but it does improve the flavour and texture of the chicken).
Meanwhile, peel and slice the onion, deseed the red and green peppers and cut them into thin strips.
When you're ready to cook, add the onion and peppers to the bowl of chicken strips and mix together until coated in the marinade. Pour the chicken and vegetables into the air fryer basket or drawer.
Air Fry at 200°C for 20 minutes. If your air-fryer doesn't have a revolving paddle, make sure you give the basket a shake every now and again to ensure that everything cooks evenly.
Once the air-fryer has finished, check the chicken is cooked - if you have a meat thermometer, the chicken should be at least 75°C .
Heat the tortilla wraps according to pack instructions.
Pop the chicken and vegetables into a serving dish, then bring them with the tortilla wraps, sour cream and grated cheese to the table and let everyone assemble their own fajitas.

Note: If cooking on the stove top, follow the instructions above up to the cooking step. Heat a drizzle of oil in a large frying pan, add the marinated chicken strips and stir-fry for a couple of minutes until starting to brown. Add the onion and peppers to the pan and continue to stir-fry until the chicken and vegetables are cooked through. Serve as above.
