This super easy cake balls recipe is perfect for using up cake cut offs, leftover cake or cupcakes and leftover buttercream icing.
I've shared a few different easy kids cakes here on the blog that require cutting into shape, creating leftover pieces of cake (most recently, my easy Among Us Cake and cute Gummy Bear Cake). Not wanting any food to go to waste, I used the cake off cuts to test cake ball recipes, until I'd come up with the ideal ratio of cake crumbs to buttercream.
These easy cake balls are the result - they're deliciously moist inside with a truffle-like consistency, then coated with a layer of chocolate and finished off with sprinkles for an extra pretty treat - not bad for converted leftovers!
This is a very rough recipe - designed for using up leftover cake scraps or leftover cupcakes, so I've given measurements per 100g of cake. If you have more cake to use up, just up the ratio of buttercream accordingly, so for example 200g of cake would need 100g buttercream. The ratio should also be treated as a fairly rough guide - moister cakes may need a little less buttercream and dryer cakes a little more, so be prepared to adapt the recipe to get the right texture for your cake.
Chocolate Covered Cake Balls
Ingredients:
- 100g sponge cake
- 50g buttercream icing
- 200g chocolate of your choice
- sprinkles (optional)
Method:
Crumble the cake into a large bowl, then continue to crumble between your fingertips until it has the consistency of breadcrumbs.
Add the buttercream icing and mix together with your hands until it starts to come together in a kind of dough. If your cake is quite moist, add the buttercream a little at a time until you get the correct consistency.
Break the dough into walnut sized pieces and roll into smooth balls.
Place the cake balls on a plate and pop in the freezer to cool while you melt the chocolate.
Break the chocolate into small pieces and place it in a microwave safe bowl.
Melt the chocolate in the microwave in 30 second bursts, stirring between each one to ensure it melts evenly, until just melted and smooth.
Use a spoon to dip the cake balls into the chocolate to coat, then pop them back on the plate.
Working quickly, top with sprinkles if wanted, then repeat until all the cake balls have been coated in chocolate.
Pop in the fridge for 15 minutes until the chocolate has completely set.
Serve and enjoy!
