Rainbow Fruit & Veg Snack Platter - This was fun and easy to throw together and was thoroughly enjoyed by my older son when I made it in celebration of St Patrick's Day a few years ago. To make it, I arranged red grapes, little circles of raw candy striped beetroot, strips of red pepper, carrot flowers (cut out with mini bento cutters), strips of yellow pepper, cucumber stars (also cut out with mini bento cutters) and a few raw sugar snap peas to form rainbow on a large blue plate. I peeled and thinly sliced a mini Babybel cheese and arranged it to form a cloud, then finished the snack plate off with some yummy chocolate coins as a treat.
Rainbow Fruit Sundae - Last but not least, my kids always love a rainbow fruit salad, and it looks extra lovely arranged in a tall sundae glass like this one. We also love keeping a bowl of our simple rainbow fruit salad in the fridge ready to grab and go for breakasts, snacks and desserts, yum!
